Tonight, I made butternut squash soup. For myself.  Maybe my mom will eat some. It’s Lent and I needed to make something for lunch that I could take to work tomorrow.  Everyone should try butternut squash soup.  It really makes me feel good inside, all warm and comfy especially on a cold winter day.

Roasted butternut squash
Butternut squash tossed in olive oil and roasted in the oven.
Onion and garlic are cooked until soft and then the squash is added to the pot.
Add some vegetable broth, bring to a boil and then simmer for ten minutes.
